Pizza Fatty

This is the first in a series of Fatty's I smoked this past weekend.
I'd never done a pizza fatty before and wanted to try something different as far as the weave of bacon goes. Yes, bacon does make everything better, but I was thinking about some prosciutto or cappicola or something.. I was talking to Kel about it and she suggested taking a pepperoni log and slicking it with a veggie peeler, making long, thin strips to do the weave with. I was pretty happy with the idea. I found the pepperoni too hard to get through with a potato peeler, so I tried to slice it with a knife and it came out just...Ok, nothing fantastic. I'd like to explore this a little more in the future. Anyway, on with the pix.

All in all it was really good. The pepperoni weave was great as it was crispy on the thin edges and had a nice bite. Like I said, I'd like to explore other means of slicing the pepperoni log lengthwise to get a more consistent thickness. If any of you have a suggestion, please share.
